Roast chicken & a vegetable cake with a sour cream and Thai dressing


1 Roasted chicken breast, sliced

bubble & squeak recipe made with curly kale

1 tbsp Thai vinaigrette (see recipe)

1 tbsp sour cream

Small handful of rocket leaves


       Cook the bubble and squeak as per instructions and place on a plate.

       Mix the vinaigrette and sour cream together.

       Top the vegetable cakes with the rocket leaves.

       Arrange the chicken slices on top and pour over the dressing .

       Serve immediately.
