Roast chicken & a vegetable cake with a sour cream and Thai dressing
1 Roasted chicken breast, sliced
½ bubble & squeak recipe made with curly kale
1 tbsp Thai vinaigrette (see recipe)
1 tbsp sour cream
Small handful of rocket leaves
· Cook the bubble and squeak as per instructions and place on a plate.
· Mix the vinaigrette and sour cream together.
· Top the vegetable cakes with the rocket leaves.
· Arrange the chicken slices on top and pour over the dressing .
· Serve immediately.
