Broccoli & Stilton Pie


Delicious vegetarian dish or add meat if you prefer!

Serves 4


1 head of broccoli
150g medium stilton
1 onion, finely chopped
2 tablespoons of plain flour
25g butter
300ml vegetable stock
200g puff pastry
10ml Milk or egg wash



•    Melt the butter in a pan and add onions and shallow fry until the onions are translucent.
•    Par boil the broccoli in a separate pan for 5 minutes. Add to the onions.
•    Add the flour and gradually add the stock until a nice sauce consistency.
•    Crumble the stilton and add to the sauce.
•    Whilst the mixture is on a low heat, roll out the pastry to fit a suitable oven dish
•    Transfer the mixture into the oven dish, cover with the pastry and baste with milk or egg wash.
•    Put in a pre-heated oven at 225 Degrees C/ Gas Mark 7
•    Cook until golden.
