We have just completed this months first Duke of Edinburgh Cookery Class. We had 4 teenagers taking part this time all aiming to achieve their Bronze Award.

We had great fun learning about sauces, food hygiene and safety as well as many other areas, the course will last over 3 months which by the end will give them all the practical and the course work they will need to get their award. If you know a young person that would like to focus on obtaining a life skill as well as a recognised award, give us a call.

A lot of families may sit down and eat together, but how many actually have some educational fun and cook together?

These events are a great way for all the family to bond and learn a new skill.

Pudding Pie Cookery School, keeping cookery fun.

Made with bread dough instead of pastry, absolutely delicious!

Ingredients

500g strong white bread flour
10g yeast
5g salt
20g sugar
175g water (weighing is more accurate than in a jug)
175g milk
100g soft light brown sugar
200g unsalted butter (at room temperature)
1 tbsp ground cinnamon

Method

•    Preheat the oven to 250 degrees Celsius
•    Add the yeast to the flour.
•    Add the salt, sugar, milk and water.
•    Hold the bowl with one hand and mix the ingredients around with the other for 2-3 minutes until the dough starts to form.
•    Knead the dough for about 10 minutes until it becomes silky to touch.
•    Rest the dough for 1 hour.

Make the cinnamon butter whilst you are waiting, for the cinnamon butter:

•    Cream the butter and sugar together, and then add the cinnamon.
•    Flour the work surface evenly and scrape the dough out of the bowl.
•    Flatten the dough a little with your hands and then using a cutter divide the dough into 10-12 pieces and then roll them into long sausages.
•    Flatten slightly, and then using ¾ of the butter spread it along the dough.
•    Then roll it up into a swirl.
•    Place them onto a baking tray lined with greaseproof paper and prove for a further 45 minutes. Put the rolls into the oven.
•    Mist the inside of the oven with a water spray just before closing the door.
•    Bake for about 10-15 minutes until golden brown.
•    Cool on a wire rack.
•    When still slightly warm spread the remaining butter over the top of the swirls, this will make them glossy and taste delicious.

With the knowledge of a local wine expert you will learn how to taste and distinguish between different wines. We provide everything you need from the glasses to the wine itself, all available from just £12 per person when combined with one of our services.

Just thought we’d update you on some exciting news we have. It’s early days and things can always go wrong, but we think we have finally found a suitable premises to kit out, as a fully functioning school kitchen.

The idea being we can start running our Diet Clubs, Hen Parties, Courses, Kids Parties and Classes for all ages in our own custom built premises.

We hope to be able to cater for up to 20 people with ample work space and parking, Clearly it will take us a few months to get it fitted out and ready, but unless something stands in our way we hope to have it up and open by early November. We will keep you updated as we know more.

We’ve known for a while that broccoli has good anti-cancer properties. Now we know why. Scientists at the Institute of Food Research in Norwich have found that the magic chemical called sulforaphane counteracts a genetic fault that’s involved in prostate cancer.

The experiments, on human prostate tissue, found that this chemical dampened down activity in the cells that lacked the PTEN gene, reducing risk of cancer. Whilst this isn’t as good as research done directly on people, it’s a promising start.

What’s it good for?

Broccoli helps protect against prostate cancer, lung, colon, breast and ovarian cancer. A study also showed that people who eat the most cruciferous vegetables (such as cabbage and broccoli) have nearly a third lower risk of bladder cancer compared to those who eat the least.

Eye Health, Broccoli contains lutein, helping to counteract cataracts and eye degeneration. Broccoli is also high in disease fighting vitamins A and C, plus fibre and folate (vital to prevent birth defects). It also has iron, zinc, bone-strengthening calcium and magnesium.

5 ways with broccoli

• Add to stir-fries, with garlic ginger, honey, soy sauce, fresh coriander and lime. Cook in sunflower oil to best retain the nutrients.
• Cut it up small and add it to pizzas.
• Lightly steam and serve it with cheese sauce and a jacket potato.
• Add to omelette’s.
• Cook with pasta, olive oil and pine nuts (our kids used to think they were cool eating it because they were trees)

So broccoli may look like just a vegetable, but it is in fact one of the most healthy ones you can eat, bearing in mind it’s cheap to buy and easy to cook, are you eating enough?

Self-service tills have topped a list of things consumers find most irritating about doing their weekly food shop.

According to new research 73% of consumers find automated tills the most infuriating part of shopping for food.

Whilst the self-scanning machines have been introduced to most supermarkets as a method of easing the stress of a weekly shop, it appears that for a large majority of the British public, they are doing quite the opposite. Although they may ease queue congestion, the anger they invoke when they fail to work properly is turning a lot of people off using them altogether.

Marks & Spencer was the first British retailer to pilot self-service tills in a few stores back in 2002, and since then the practice has been adopted by the majority of the bigger chains, including Tesco, Asda and Sainsbury’s. However, independent retailers are viewing the findings as further proof that customers favour face-to-face contact over automated service.
